For this post, I have another fish recipe. Now, I believe a lot of people aren’t getting enough seafood in their diet and I speculate it is because: 1.) they are intimidated to cook fish because they find it difficult and have no good recipes for it and 2.) it can be expensive. Well, have no fear, Jennifer is here to settle your seafood qualms. First of all, don’t be intimidated to cook fish. Yes, it can fall apart if you don’t know how to treat it right, but with good recipes and tips, this can easily be remedied. Second, some seafood can be pricey, but if you shop smart, it can be affordable. Also, knowing what types of fish that are more reasonable in price will make you an educated shopper.
Ok, this recipe is for a lemon parsley tilapia. This recipe is easy, delicious, healthy (no frying here!) and tilapia is very affordable. Tilapia is a very light, flaky white fish that comes on sale on a pretty regular basis so I always buy it up when it does. Now, since it’s a very light and flaky fish, it can break apart very easily if you are not careful with how you cook it. Methods such as grilling are not recommended. In my recipe, I just simply bake it which will keep the tilapia intact. Anyways, enough talk, on to the recipe:
Lemon Parsley Tilapia (serves 2-4)
- 6 tilapia fillets
- 1 lemon (we’ll be using the zest and the juice)
- fresh parsley (just rip off a handful)
- a few small pats of butter
- salt and pepper to taste
Preheat oven to 425°F. Arrange tilapia fillets in a glass baking dish. Zest lemon and sprinkle zest on fillets then salt and pepper fillets to taste. Arrange a few pats of butter on top of fish and bake in oven till fish is done, about 10 minutes. Fish is done as soon as it flakes easily with a fork, no longer! The more times you cook fish, you will get better at knowing when it’s done. As soon at fish comes out of the oven, sprinkle parsley on fish and serve. That’s it! No flipping the fish and having it break apart, no deep frying, nothing complicated! Just bake and serve.
